Trinidadian culinary culture is as much, if not more, a derivative and evolution of Indian as African cuisine, with curries, dhals, bhajis, and rotis staples in the diet. Doubles β curried chickpeas inside two fried baras, one of the most delicious and fortifying customs at breakfast β can be found here, a takeaway hole-in-the-wall on the edge of Clapham Common, and a specialist in Trinidadian roti breads. Elsewhere thereβs curry goat, stew chicken, buss-up shot (broken paratha-like roti), and pholourie (fried doughballs) served with tamarind chutney. To drink? Mauby Fizz and Solo sodas, or sorrel (a sweet-spiced hibiscus flower cordial.)
