Hetta is the combined experimental work of executive chef Olof Johansson and chef de cuisine Alberto Sambinelli, both with Michelin pedigrees. The paper menu placed in front of you when seated in the elegant, open dining room resembles a sprawling mathematical diagram of delicious data points: along the X axis of the seasonal menu are nine key ingredients on which all of the dishes are based, while the Y axis plots out three preparations of each ingredient, from coldest to hottest. Grilled baby romaine with almond emulsion; egg yolk with bottarga; raw oysters with pickled dill flowers; and chicken liver parfait with pears and mustard were among the winter highlights. [$$$]
