The dining room may have a businesslike atmosphere, but the Michelin-starred food of Finnish chef Mickael Viljanen is wild and adventurous. Viljanen puts Irish ingredients into dishes that sometimes feel like works of imagination. Things are not always as they seem: He bakes celeriac in a rye skin to make it look like aubergine to play with your notions about this smoky silken vegetable. But his creations are always delicious.
