The MoPho team opened Maypop in the CBD three years ago, and with it introduced an ambitious mash-up of Vietnamese, Sicilian, and Cajun to the city. Chef Michael Gulotta balances bold, intense flavors with familiar, comforting focal points, like the fried oysters with manchego, spicy cucumbers, and soy aioli; delicate seafood pastas that pack punches of saffron, lemongrass, or anchovy; and only-at-Maypop versions of tom yum and bouillabaisse. The dim sum brunch offers a less expensive way to experience Gulotta’s fantasy world.
